Roti sai mai (Thai: โรตีสายไหม, pronounced [rōːtīː sǎːj mǎj]; "sai mai"; lit. 'silk rope') is a Southeast Asian dessert influenced by Indian culture from Thailand, the dish is made by wrapping the cotton candy with roti crepe to form a cylinder roll, it originated in Ayutthaya and is often sold at street stalls by Muslim vendors. It was accidentally invented by a roti vendor, Mr. Pia Seangarun, when he was making sugar syrup. This sweet can be made with many different colors, flavors and toppings such as pandan and coconut. The roti crepe is made by cooking a thin layer of dough, while the cotton candy requires extensive and special work like stretching the sugar threads. In July 2022, Lisa from BlackPink causes a rise in popularity after spreading words about the dish on her Instagram story making the dish to be well-known among people outside of Thailand, especially her international fans.

History

Although there aren't any official documentations that explain how Roti sai mai was created. The most agreed on story is that Mr. Pia Seangarun, a roti vendor living in Thailand, was the original inventor of this dessert which can be seperated into three different time periods.

1957's

In 1957, Mr. Pia Seangarun went back to his home to make more sugar syrup for his Rotis. Sometimes when doing this he accidentally go for too long and the sugar became too hard and impossible to be pour, which is not ideal for his rotis at the time. So he experiment by stretching the sugar until soft and silky. He realized that the sugar threads can be repurposed and rolled with the roti crepe, which leads to the birth of roti sai mai.[3]

1963's

In 1963, Mr Pia Seangarun rode his lover’s bicycle to sell his newly created Roti sai mai. He put them into a box drilled with coin hole for customer to use. The box is design to activate a spinning wheel once a coin is inserted, which will land on a random number. Whatever the number is, the same of amount of Roti Sai Mai the buyer will get.[3]

1977's

To be able to satisfy his customers, in 1977 Mr.Pia Seangrun improved his original roti crepe recipe (which includes wheat water, and salt) by adding new ingredients to create varieties such as milk, coconut milk, sesame seeds, and grains.[3]

For most roti sai mai shop there are 9 differents flavours for the cotton candy which are pandan, orange, grape, blueberry, strawberry, banana, taro and chocolate.[4]

Toppings for roti sai mai usually contains fruits and vegetabels such as pandan, pumpkin, carrot, taro, and coconut.[4]

Packaging

Originally, Roti sai mai was packed to be sold in an aluminum box. However in the present day, many shops tends to shift toward using more convenient alternatives such plastics bag for both the cotton candy and crepe, seperately.[3]

  • 2 sticks/rod for sugar stretching

Ingredients

  • 2 kilograms of brown sugar
  • Water
  • Wheat flour
  • Lotus oil

Recipe

  1. Heat the pan up then pour in water mixed with the brown sugar, cooked until gummy.
  2. Fill in an aluminum basin with cold water and another small one with the gummy mixture. And put the gummy basin in the bigger basin to cool down. Then mix the sugar gummy by scraping the edge and putting it in the middle. Keep doing this until it represents a solid golden color, then set it aside. Make sure to keep the basin in at cold or room temperature to prevent over solidifying.
  3. Mix the wheat flour with the lotus oil, stir to combine then set aside for an hour. Then pour out the flour-oil mixture into a large aluminum tray and put it on a fire to heat up a bit.
  4. Take the previously cooled-off sugar, roll until it is long then connect both ends to form a hoop.
  5. Stretch the cotton candy mixing both the sugar and flour-oil mixture in a large tray. Use two sticks to stretch out the sugar and twist to form two hoops stacked on each other.
  6. Repeat this until a cotton candy thread is formed.

Ingredients

  • 600 grams of dough
  • One teaspoon of salt
  • 3 tablespoons of tapioca flour
  • 2 tablespoons of olive oil
  • 450 ml of water

Recipe

  1. Mix water, 2 tablespoons of olive oil, dough, salt, and tapioca flour together in a bowl. Then thresh it for 3-5 minutes until homogenized and set aside for 15 minutes.
  2. Heat up a pan, and take part of the dough size of one hand. Then coat the pan with a thin layer of the dough in a circular shape. If there is any excess dough, use a scraper to clear it out.
  3. Once the dough is dry and cooked, scrape the edge and pull it out of the pan.

How to eat

To eat roti sai mai is as simple as placing the cotton candy on the crepe, then wrapping up the crepe to form a roll similar to that of a burrito.[6]

On 15 July 2022. Lisa, A K-Pop star born and raised in Thailand, recently uploaded an Instagram story on her account featuring the thai sweet roti sai mai.

Pranpriya Manobal (Lisa) from the south korean girl group,Blackpink.

This caused a massive amount of fans to order the treat, making a flurry on vendors in Ayutthaya. Sellers outside the Ayutthaya Hospital reported a surge in orders overnight. Orders from other countries outside of Thailand also doubled to 5,000 a day with the most from South Korea.[7]
