I am not sure you are giving the impression with this definition that you want to give. As you say fritata, fritatta or through lots of Ecuadorian to Dominican usages the word is used to mean a dish made by frying SOMETHING or things including veggies. Sometimes, lots of different ways to say pork. My mother made a "fritatta" using eggs and leftover macaroni.
