Français : Calibrage d'un plat Piza, au grand atelier de la manufacture nationale de Sèvres. Le plat sur son moule est passé au calibre en acier. L'épaisseur et le profil extérieur sont donnés par la descente manuelle du calibre sur la croûte de pâte en rotation.
