Summary

Description
English: Enzymes have catalytic sites that perform the myriad reactions needed to sustain life. For example, alpha-amylase (turquoise) is found in saliva where it begins the breakdown of complex carbohydrates (yellow) into glucose and maltose. The food industry takes advantage of this �activity using the enzyme in large quantities in �the production of high fructose corn syrup.
