Grugg & Makk is an Icelandic brewing company founded in 2022 by designers Sveinn Steinar Benediktsson and Kjartan Óli Guðmundsson. The company specializes in Icelandic wild ales made with local wild yeast, capturing the essence of Iceland's nature and biodiversity. Their goal is to expand Iceland's beer culture by creating distinctive wild ales with flavors derived from different locations across the country, answering the question: What does a place taste like?[1]

Grugg & Makk blends the founders' design backgrounds with their passion for brewing, producing wild-fermented beers that reflect Iceland's diverse microflora. Their process begins with their own base wort, to which different native wild yeasts are added that have been harvested from various regions in Iceland, each creating a unique wild ale.[2]

Their method combines traditional brewing techniques with modern science, allowing them to capture the flavor of Iceland's natural environment. Grugg & Makk offers immersive tasting experiences for groups, where participants can explore the flavors of Iceland's landscapes and discuss how they perceive the differences in aroma and flavor of each represented location. These tastings also provide insights into the company's brewing methods, the role of Icelandic biodiversity, and the history of beer.[3]

The company's philosophy celebrates the idea that each location in Iceland has its own microbiota, represented in the flavors of the wild ales. Grugg & Makk aims to foster a new culture around wild ales in Iceland, showcasing the connection between nature and brewing. Their mission is to give consumers a taste of the landscape by capturing Iceland's essence in every brew. With a focus on local ingredients and sustainable practices, Grugg & Makk is part of a growing movement of small craft breweries introducing wild-fermented beers to both local and international markets.[4]
